Method:
Marinate the chicken overnight with the ingredients. ( I have taken 2 small chicken)
1 tbsp red chili powder
1 tsp tumeric
2 tbsp Ginger garlic paste
1 tsp garam masala
150 gm curd/yogurt
Salt as per taste
For the masala:
Ingredients:
Ghee and Oil for frying
4 Potatoes
9 onions
3 tomatoes
2 chicken ( I have not used breast piece)
Cilantro
- Add ghee and oil
- Fry the potatoes and in the same oil make birista (caramelized onions)
(keep some aside for garnishing) - Add tomatoes, put the marinated chicken.
- Add birista (caramelized onions) , Bombay biryani masala, salt
- Add fried potatoes and cilantro / coriander leaves.
- Add the the rice layer.
Rice:
Ingredients:
3 glasses rice
4 tsbp salt
Whole garam masala
4 cardamoms
2 anise
1 Mace
8-9 peppercorns
2 bay leaves
1 cinnamon stick
2-3 cloves
1 tsp shah zeera
Boil the rice with whole garam masala and salt.
Steam:
Put saffron milk and oil (add colour in the milk if you want).
Cook in low steam with foil paper.

As it is in layers, we will cook them separately.
You can make both simultaneously. (Be careful though)
Don’t overcook the chicken.
